The 16-min dinner - Samo!

Happy Mother’s Day to all mothers in the world. A lot of us will be pampered today. Brunches, baked goods et all. Carb coma! For tonight’s dinner, why not try something quick, light and gluten-free?

May I suggest the kids and Dads try to make this to continue the pampering?

The 16 minute, gluten-free dinner. Japanese/sawa millet (Samo) with crushed peanuts made in the IP, side of air-fried potato wedges. Yes, avocado goes with everything!

The sides are optional.


Ingredients

  • 1 cup samo (a.k.a sawa millet)

  • 3 cups yogurt

  • 3 cups water

  • 1 1/2 cup roasted peanut powder

  • 1/2 cup crushed peanuts

  • 1 med potato

  • 1 Tbsp cumin seeds

  • 1 Tbsp curry leaves

  • 2 Tbsp ghee (clarified butter)

  • 1 Tbsp crushed green chilies

  • Salt to taste

  • Parsley, crushed chilies, peanuts to garnish

Recipe

  1. Soak samo (a.k.a sawa millet) in water for 5 mins. Keep aside.

  2. Peel, cube the potatoes, very thin slices.

  3. whisk yogurt in a mixing bowl. Keep ready.

  4. Turn on IP in sauté mode, add ghee

  5. Once the oil is warm, add cumin

  6. Next add green chilies and leaves

  7. Let them all crackle, cover with lid

  8. Add potatoes and roast. Add salt

  9. Now add the samo that was kept aside earlier, 3 cups water and salt to taste

  10. IP - Manual mode for 6 mins, low pressure

  11. QPR, change mode to sauté.

  12. Add peanut powder, stir

  13. Add whisked yogurt, stir quickly.

  14. Serve with a side of veggies, avocado

  15. garnish with parsley, red chili flakes
